Roast Beef, Provolone, and Arugula Panini
Tender roast beef, nutty provolone, and spicy argula come meld together for this delicious sandwich.

- 2 slices sourdough breaf
- 3 slices roast beef
- 2 pieces provolone cheese
- 1/4 cup arugula
- 1-2 tsp Dijon mustard
- 1 tbsp butter
- 1/2 tsp lemon juice
- 1/2 tsp olive oil
- salt to taste
- pepper to taste
In a small bowl, mix arugula, lemon, and olive oil. Salt and pepper to taste. Toss to combine.
Spread mustard on both sides of bread.
Add 1 slice of provolone, roast beef, then second piece of provolone.
Add arugula and close sandwich.
Heat a skillet over medium heat.
Add sandwich and toast until golden brown, 2-3 minutes per side.
Serve immediately.
- You can swap mayo for mustard, but I think mustard gives it the right amount of tang.
- If you don't eat beef, turkey or chicken would work fine.
