Roast Beef, Provolone, and Arugula Panini

Tender roast beef, nutty provolone, and spicy argula come meld together for this delicious sandwich.

Ingredients

  • 2 slices sourdough breaf
  • 3 slices roast beef
  • 2 pieces provolone cheese
  • 1/4 cup arugula
  • 1-2 tsp Dijon mustard
  • 1 tbsp butter
  • 1/2 tsp lemon juice
  • 1/2 tsp olive oil
  • salt to taste
  • pepper to taste

Instructions

  • In a small bowl, mix arugula, lemon, and olive oil. Salt and pepper to taste. Toss to combine.
  • Spread mustard on both sides of bread.
  • Add 1 slice of provolone, roast beef, then second piece of provolone.
  • Add arugula and close sandwich.
  • Heat a skillet over medium heat.
  • Add sandwich and toast until golden brown, 2-3 minutes per side.
  • Serve immediately.

Notes

  • You can swap mayo for mustard, but I think mustard gives it the right amount of tang.
  • If you don't eat beef, turkey or chicken would work fine.
