Nothing says summer quite like a fruit crisp. This mixed berry crisp combines the best of ripe summer fruit for an easy dessert that makes the most of berry season.

Mixed Berry Crisp

One of the best things about summer is fresh fruit. It’s at it’s peak, and perfect for using in dessert. I’m partial to chocolate, but even I can’t pass up a good crisp. Berries are at their ripest are naturally sweet, and perfect for a dessert person. This makes for a dessert that requires little added sugar without sacrificing taste.

What Is A Crisp?

You may be asking yourself what the difference is between a crumble and a crisp? A crisp has oatmeal in the topping, while a crumble does not. This makes for a streusel like topping with a bit more texture. You’ll be able to taste a slight crunch when you bite into it.

The Fruit

Like I said the fruit is the star of the show in this crisp. Take advantage of the season, and opt for fresh fruit over frozen. I like to use a mix of fruits and for this crisp I chose strawberries, blackberries, and raspberries. A little bit of fresh lemon juice accentuates the natural flavor and ripeness of the berries and a touch of vanilla rounds out the flavor.

Variations

You can use any combination of summer fruit here. Peaches would be great, as well as blueberries or apricots. You can also swap orange juice for lemon juice for a bit of a different flavor profile. Lastly, if you want to elevate this dessert add a touch of brandy or orange liqueur to the fruit to take it over the top!

Gather your ingredients.

In a large bowl add 3 cups of fresh fruit.

Sprinkle in granulated sugar and vanilla.

Toss together ingredients until slightly mixed.

Slice butter into cubes and add to a separate bowl.

Add flour, oats, cinnamon, cardamon and brown sugar.

Using your hands mix together crisp topping until clumps form.

Add fruit mixture to a greased dish. I used 2 8oz au gratin dishes today.

Place on sheet pan, and bake at 400 degrees for 20-25 minutes.

Mixed Berry Crisp

This crisp takes the best of summer fruit and makes a delicious low effort dessert.

Ingredients

  • 3 cups fresh fruit
  • 1-2 Tbsp granulated sugar
  • 1 Tbsp fresh lemon juice
  • 2 Tbsp all purpose flour
  • 1 Tsp vanilla extract

Crisp Topping

  • 1/2 cup All purpose flour
  • 1/2 cup dark brown sugar lightly packed
  • 1/2 cup rolled oats
  • 1 tsp ground cinnamon
  • 1 stick unsalted butter cold
  • 1/4 tsp cardamom optional

Instructions

  • Preheat oven to 400 degrees.
  • In a a large bowl combine fresh fruit, lemon juice, granulated sugar, and vanilla.
  • Add 2 tbsp flour, and toss mixture lightly with your hands until fruit is completely covered.
  • In a separate bowl, combine flour, oats, cinnamon, cardamon, and brown sugar and give it a quick stir.
  • Slice butter into small cubes and add to dry mixture until clumps form.
  • In a greased ramekin or small baking dish add fruit mixture.
  • Top with crisp until completely covered.
  • Bake at 400 degrees for 20-25 degrees until brown and bubbly. Serve immediately.
