Nothing brings people together quite like sports and food. We may not agree on who to root for, or even know who’s on the team. But I don’t know anyone who doesn’t agree that the snacks are the best. The Super Bowl is coming up, and my game day nachos are the perfect start. I layer my beef and chorizo chili over crispy tortilla chips. I add my hearty chili and cover it in spicy cheese. Delish!
Ingredients for Game Day Nachos
- Chili – Chili on its own is a bit heavy for game day. Chili as a nacho base for your appetizer is perfect. You can use store-bought chili. However, if you want to show off, my spicy Beef and Chorizo Chili is the perfect nacho base.
- Freshly Grated Cheese- This is not the time for bagged cheese. Freshly grated cheese will be the freshest, and melt evenly over the chili.
- Tortilla Chips- I prefer sturdy restaurant style tortilla chips for nachos. They’re bigger and serve as the perfect vehicle for your toppings.
How To Make Nachos
Preheat oven to 300 degrees. Layer tortilla chips on a large sheet tray.
Grate 8 oz of Monterey Cheese
Layer Beef and Chorizo Chili over tortilla chips. Top with shredded cheese.
Bake at 350 for 10-15 minutes until cheese is melted and bubbly.
Add lettuce, salsa, and sour cream.
Extras
If you’re feeding picky eaters or people with food allergies/preferences, a DIY nacho bar is a perfect alternative serving option. If you go these route I would recommend having a queso or cheese sauce option so you aren’t watching the oven.
You can also add jalapeños, pickled onions, and olives for additional garnishes.
The grated cheese can be prepped in advance and stored in the fridge until you’re ready to assemble the nachos.

Game day Nachos
Ingredients
- 1 bag tortilla chips
- 2 cups chili
- 8 oz Monterey jack cheese freshly grated
- 1 cup lettuce finely shredded
- 1 cup salsa
- 1/2 cup sour cream
Instructions
- Preheat oven to 300 degrees.
- Spread an even layer of tortilla chips on a large sheet pan.
- Layer chili over tortilla chips.
- Top with shredded cheese and bake for 10- 15 minutes, until cheese is melted and bubbly.
- Remove from oven, top with lettuce, salsa, and sour cream. Serve immediately.
Notes
- To make this vegetarian, substitute refried beans or black beans for chili.
- For a spicer nacho, use pepper jack in place of Monterey Jack.
