Easy Brioche French Toast

French toast is in my starting lineup of dishes. If I could only make 5 dishes for the next of my life, this easy Brioche French toast would be one of them. I am a breakfast person, so no matter the time of day I am always down to eat breakfast. Perfect for breakfast, better for brunch, once you make this you will never order it from a restaurant again. Growing up I would make it but it never tasted quite like what I would get at restaurants.

After several years and a few tweaks I’ve come up with a fail proof version of amazing French toast at home. There are a couple of key ingredients I use that separate this from your average French toast. First, the bread, you need brioche. Sandwich bread isn’t going to cut it for great French toast. Brioche is thicker and richer than regular bread. It’s sturdy and will hold up to the custard mix without getting soggy or falling apart. Second, swapping brown sugar for white sugar. Tried this on a whim once and I have never looked back. Brown sugar provides a better depth of flavor, without being overly sweet.

Whisking half and half into eggs.

On a hot griddle or large skillet, melt butter and add french toast slices.

Ingredients

  • 1 loaf brioche
  • 4 Tbsp unsalted butter
  • 2 cups half and half
  • 5 large eggs
  • 2 teaspoons vanilla extract
  • ¼ cup dark brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ½ tsp honey (optional)
  • Pinch of salt

How To Serve

If you want to add some razzle dazzle, a dollop of whipped cream works well. Fresh strawberries, blueberries, or sliced bananas won’t hurt either. To keep french toast warm before serving place in an oven that’s been heated to 200 degrees.

Directions:

  1. In a large bowl, whisk together eggs. Continue to whisk and pour in half and half.
  2. Add vanilla, brown sugar, cinnamon, nutmeg, honey, and salt. Whisk while to combine.
  3. Heat a large skillet or griddle over medium high heat.
  4. Melt 1 tbsp of butter in skillet.
  5. Dip bread in custard mixture, turning 2-3x, for about 10-15 seconds max.
  6. Remove bread from custard, drain excess and place in hot skillet.
  7. Cook until golden brown about 3-4 minutes per side.
  8. Serve immediately with warm maple syrup and extra butter.

  • 1 loaf brioche sliced into 1 /2 inch pieces
  • 5 large eggs
  • 2 cups half & half
  • 2 tsp vanilla extract
  • 1/4 cup dark brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp honey optional
  • 1 pinch kosher salt

Instructions

  • In a large bowl whisk together eggs.
  • Continue to whisk and stir in half and half.
  • Add vanilla, brown sugar, cinnamon, nutmeg, honey, and salt. Whisk well to combine.
  • Heat a large skillet on medium high heat.
  • Melt a tbsp of butter in skillet.
  • Dip bread in custard mixture, turning 2-3x times until fully coated, for 10-15 seconds max.
  • Remove bread from custard, draining excess and add to hot skillet, 2-3 pieces at a time.
  • Cook toast until golden brown, about 3-4 minutes per side.
  • Serve immediately with warm maple syrup and extra butter.

Notes

  • Challah is a perfect substitute for brioche.
  • A splash of Grand Marnier or bourbon to the custard makes a wonderfully boozy version of this french toast.
